You've had to work a extra hour get home and the rest of the family begins to greet you with not "hi mom how was your day" bu "there nothing to eat and we're hungry". I'm sure a scene played in all your homes from time to time. I hear this once a week if not more. I have a simple solution..LEFTOVERS! At any given night I have one or two things left over from a previous dinner that I can add to or change up to not only make something new, but something that taste pretty good. Left over roasted chicken? A box of chicken stock, carrots and onions, can biscuits and flour for thickening, and Wola! Chicken and dumplings. Meatloaf and beans from 2 days ago. Crumble the meatloaf in a soup bot, a can of spicy stewed tomatoes and toss in the beans, Tada! Chili. It only takes a few minutes of creativity and you can have a fast and easy meal on the table. The possibilities are endless! Next time you hear what's for dinner, just open the fridge.
