Eggplant fries

I'm not a big fan of eggplant but recently just made eggplant fries and they were really good! Anyone have any other good eggplant recipes that are easy? These I just cut up into little strips, dipped in egg white and rolled in breadcrumbs and some seasoning and baked them. So good! We dipped them in a little ranch dressing when we ate them.

Hello kemak, you have given an interesting way of preparing eggplant fries. I prepare them all the time but without using eggs, What I do is mix a little salt, red chilly powder or black pepper powder with a a 2-3 tablespoons of semolina, coat the eggplant slices with this mixture and grill it with a few drops of oil. It does taste very good.

That sounds good I will have to try that. What is semolina? I have never heard of that.

Semolina is coarsely ground wheat, which is left after the fine flour is sifted. We use this in many preparations.

This sounds really really good. I have never been able to do anything with eggplant without it tasting spongey or mushy. I really wanted to like it, too, but I just couldn't! I tried a recipe that involved sauteeing it I think in some kind of tomato soup base or something - this was years ago so I can't really recall - but it turned out HORRIBLE! Then again I am also a terrible cook!

These were really easy and hard to screw up you should try them. Zuchhini fries are also good!

Kemak, that's a creative eggplant recipe! I would do that except bake them instead. It's healthier to bake than to fry them. What kind of seasoning do you use? How many degrees and how long did you bake them?

Fried eggplant slices - Eggplant as a side dish.
You can do almost anything you do with zuchinni with eggplants. And many times they come out better. If you cut them in big slices, skin and all, and fry them, they look awesome as a side dish.

Wow, you made me hungrier. Thanks for giving me an idea. My wife is good in cooking and I will request that eggpalnt fries. I know it's healthy and cheap. It's something new, because I had a taste of several kind of recipe except that new one now that I have just learned. Nice one there. Thanks

Here in the Philippines, one of my favorite morning dish is "Tortang Talong" or Eggplant omelet paired with fried rice. Also you can try sauteed eggplants in shrimp paste, yummy!

Hello kem and welcome to myLot. I have been trying to find a way to fix eggplant that my family will eat. I think you have hit on just the thing. When I started reading your discussion I thought oh oh deep frying but You had a better idea and Next time I get to the store I'm going to get an eggplant and make fries out of it.
