using up the figs

Every Aug/Sept I am faced with the daunting task of what to do with all the fruit we get from a large fig tree. The first year I made too much jam, the second year I made it again but this time with lemons, which improved the taste. This year I dried the fruit and yesterday, thanks to a recipe on the internet, I made dried fig biscuits. They are a real treat, taste far better than the shop ones and of course contain more figs. They are simple to make, rather like making sausage rolls with sweet pastry and mashed up figs.

Dried figs are wonderful as snacks and you can keep them the year around. You can also give them as a gift to people that don`t have a fig tree at their back yard. I have an apricot tree ans part of my Christmas presents is apricot jam (the jar is recycled). They love it. I specially like a fig jam with nuts. Check a recipe online.
