Lemons including the rind are very healthy for us. The rind has been even said to have some medicinal properties to cure cancers if grated into many types of foods. I grated some rind into my macaroni salad I made yesterday and it was sooooooo good. I only had some pepper, salt, mayo, some cut up black olives and cut up grape tomatoes in it otherwise but the lemon rind really made it perk up alot! Unless I was just realllly hungry, ha! But I would try it again that way, and also trying to add the lemon zest to other things if possible. I took three lemons and froze them after washing them so I can have them at any time right from the freezer without having to worry about them going bad. I recommend it to you all if you wanna try it. Add the spices and other ingredients that you like to it as well. I wanted to add some hard boiled eggs to it as well but we finally just got more eggs today cause the stores weren't stocked in them after the hurricane (Sandy). I didn't feel like boiling any just yet.

NailTech I have never heard of or thought of freezing lemons. I am still trying to grow my own since I know of so many uses for them. I have even used bottled lemon juice when I run out or they spo[l, but I doubt it is as good for health. Frezing them makes sense..Thank you for the idea

Yes freezing them will have them at your fingertips easier and they won't spoil as quick. Thank you for the prayers sweet friend, that helps alot. Also, for all to read~I meant to add the spices you like to the macaroni salad, not the lemons themselves that I froze. I worded that wrong in my post discussion, LOL.

It was believed by some researchers that vitamin c was the miracle elxir to over come cancer. And it is true that vitamin c is found in our cells and make them complete. Many people throw away the rind of lemons and oranges. They shouldn't. The white part of the rind is actually good and nutritious food. Lemon 'zest' as it is called is found in many fancy recipes.

Since I wrote this discussion I have been putting lemon rind in something almost daily and I like it. If it isn't my salad it's my green tea, or macaroni salad or tuna salad. There will always be something to make it taste good with lemon rind. It is like I'm addicted to it now. Also Almond Milk, so yummy! I like that and Vanilla soy milk so much better than regular milk. I thought the almond milk and my pumpkin cake with cream frosting was 10 X better than anything chocolate which I'm really not supposed to have.

It also has lots of vitamin C, which is good for the body for so many reasons! For example, it helps us avoid scurvy, one of the most horrible diseases on Earth, which has symptoms like bleeding gums.

Yes I had a page on the Internet with all the health benefits but can't find it now. I just know it was a very healthy part of one's diet to include it. It would be amazing if it cured all cancers. Now I have a habit of using it at least 2 X a day. I so want to grow my own lemons but I think it's too cold for that here, I'm living in the wrong climates/country!

We use lemons alot here in Mexico. Some use it to clean sores, others use it to wash hair. I use it in my muffins, and a few breads as well.

It can clean just about anything, but sores? Ouch. I'm not too sure of that but if it helps and you can stand it OK. I have heard honey does as well, and seems less painful. I have heard of lemons making hair lighter in some hair colors, possibly the lighter brown shades, as I used to do this alot when younger with light brown hair to make it blonder.
