I didn't have baking soda but my cookies came out great!

I was experimenting while making cookies yesterday. I didn't have baking soda or vanilla extract for Toll House cookies so I made something great just the same. I used all purpose flour and banana pudding, sugar and brown sugar, and eggs and chocolate chips and dropped them by the teaspoonful on 2 cookie sheets. I knew without baking soda the cookies wouldn't spread, so I flattened them out on the pans and baked them for 12 minutes each. They are really good. I keep them in the freezer and will just take a few out each day so we don't make a pig of ourselves. My daughter loves them. She eats them right out if the freezer. I told her to watch how many she eats so she doesn't gain weight. I have 2 packs of lemon pudding and plan to make lemon cookies the same way. I'll leave off the chocolate chops, though I might add one chocolate chip on top when they come out if the oven.

I never of thought of that before, but I may try it. I know I havent had either before, and they just came out heavy, and a not as high taste. But I may try this, I havn`t been in a baking mood but I will eventually. I have been so busy working, and trying to get everything done, then I am just too tired.

They are really good. They have the texture of those soft Chips O'hoy cookies. My family likes them. I may try the lemon cookies tomorrow. If I do and they turn out good I'll let you know in a new post.

I mayy have to try them now, they do sound delicious. I love trying new recipes so I wrote this down for my next baking day.

Yay!! I guess with cookies that would work! I know I've forgotten to put baking soda (or was it baking powder) in a banana bread and it turned out seriously dense. The kids gobbled it up anyway, but I didn't care for it. But perhaps for cookies it's ok - and you thought ahead of time and preflattened them! (You're a smart "cookie", PQ - hee hee). Lemon cookies sound divine . . . oh, you're inspiring me to bake now!!

Yes they turned out great. I want to make the lemon ones today. But I'm running low on sugar. If I have enough I may just make them. I have lots if dark and light brown sugar.
