I`ll eat leftovers until New Year.

The week between Chrsitmas and New Year is the leftover week for me. I made and ate Christmas diner that I took to my daughter`s house. The 25th I invited a friend for luch and she brought a huge amount of leftover turket, stuffing, huice from the bird, you name it. I made mashed potatoes (from scratch) and brought a piece of leftover chocolate cake from my daughter`s home. The next day I went again to my daughter`s for lunh (I do it every Wednesday) and brought bach my grandson to sleep over. I made small potato pizzas with the leftover mashed potatoes and a green bean omelette with a small amount of the green beans I did not take no my daughter`s home for Christmas. Yesterday I ate suffed turkey again but today I will make mashed potatoes (fried) filled with diced turkey and cheese). Tummy and different! I still have turkey to last until New Year. I`ll have to think about new lives for it.

The week between Christmas and New Year's is my week to eat leftovers, too. I don't cook any more than is necessary, but I usually make turkey and rice soup with celery and carrots and I make potato cakes from the leftover potatoes. I think I'll put cheese in them this time! Tonight I'm having turkey, leftover raw cauliflower and celery, cheese (part of a gift) and olives. I still have a lot of turkey left over so I might can it for later.

I love turkey but there comes a time when it's just too much. I usually boil the meat off the bone and freeze portions of it for later. I canned the rest of the Thanksgiving turkey and canned the broth I boiled it in, too. It came in handy to make gravy with at Christmas, so I think I'll can what's left of this one. I still have leftover mashed potatoes. Still haven't fixed them any way but heated, but I probably will tomorrow. Time to get the refrigerator cleaned out and move on.

It seems that turkey lasts more than one would wish to. I have the leftovers or the turkey leftovers from one of my friend`s Christmas. She lives alone and has only one son. She invitet him every Christmas and makes a stuffed turkey for both of them. I invite her the next day and she brings turkey. I put the rest. Still, she brings too much. Yesterday I made these wonderful stuffed potatoes with leftover mashed potatoes to which I added a little flour to make a dough. I stuffed them with diced leftover turkey, dicef onions and cheese. YUMMY!!!

I have left overs here as well. Rice,a nd some meats. I did make beans today to go with them. I dont mind leftovers. I like to make burritos and things with what ever I have leftover here.

I like leftovers, but only if I can make a different dish with them. Just now, I finished the mashed potatoes. I made filled potatoes (fried with a filling of leftover turkey (diced) cheese, bunc onions and a little hot chile. I guess for diner I`ll just make a sandwich with more turkey, homemade mayo and some chile

Mashed Potatio Recipe Peel potatoes; then cut them into 2-3" cube size pieces Cover potatoes with water Bring to a boil Once they start to boil turn potatoes down to simmer Cook for about 30 minutes until the potatoes are really soft when tested with a fork or knife Drain potatoes in colander Put potatoes in mixing bowl Mix potatoes until they start to look whipped together Add 1/2 butter - 1 cup margarine or butter (just depends upon how much potatoes you made) Add milk until your get creamy mashed potatoes to the consistency that you like Taste test potatoes (add more margarine if you think they need it) Add salt to taste I love making mashed potatoes! I tend to go more by tasting them till I get the texture and taste that I desire. Fresh potatoes tend to require less milk where as older potatoes like those that are not fresh will generally need more milk to get them to not taste gritty.

I remember those days...always eating leftovers until the turkey was all gone. I guess that is one reason I don't cook turkey now since I don't have anyone to help me eat it. I am also just plain lazy. I don't think I could stand to eat that much turkey by myself any more. I hope things are going well for you!

I`m fine, Deb. I have some money problems that are harder to solve during holidays. But I must concentrate in the idea that the thing is on remission. So I`m fine and happy. I`m invited to my best friend`s house for New Year and I`ll stay overnight. I did not cook a turkey, but invited one of my friends for lunch the 25th and she brought HUGE leftovers of her own, delicious bird. So we ate, drank, took a nap. And then she left leaving food for a week to put away. I`m lazy too. I made Christmas diner for my daughter out of love because she was very tired and her back hurt a lot. But the only thing I brought back was a big piece of leftover chocolate cake because I did not want to do anything for Christmas lunch.

There is nothing better than left overs. I made a turkey a few weeks ago. The meat last for two weeks worth of left overs. Yesterday, I made some turkey fried rice using the dripping that I had refrigerated from the turkey along with onions and bell peppers that I had in the refrigerator. I am really learning to use what I have on hand. On Christmas day, I made a quiche dish with eggs, milk, italilian bread crumbs, onions, and bell peppers. It was so good. I love it when I can make a dish and have some left overs.

I love quiches and they can be made from almost anything. I always make my own breadcrumbs as in my country the cheapest bread is french bread. If I have stale bread I make several things with it.

I only buy ffrench bread and that makes wonderful breadcrums. I have leftover bread because I live alone but recieve many visitors. So I can`t just buy the amount I need for me.

I had read that you can make your own bread crumbs, but I rarely have left over bread. Lots of time as it starts getting a little on the old side I just toast it and it tastes so good! Well, I have leftover bread crumbs in the container that I bought awhile back I think it was from making Chicken Parmessan. So, I figure minus well use them up rather than letting them sit in the pantry. It is amazing how much you can just make with the ingredients that you have on hand if you get creative enough in cooking.

hi, one of advantage in the house during Christmas was we were many at home,so even we had many leftover during Christmas after a day it was gone because we ate it,so no food to be trash that time,but when i am alone for sure there are many wasted food in the house.

When I have family or friends for a barbecue in Summer, we cut up the cold meat for a mixture of teatime and ealy dinner. Parties can last longer if we use up the excess food left from the main meal.

Thanks a ton for sharing this discussion. Well looks like u have utilized the leftover food properly. Besides i would like to mention here that there is no harm in having the leftover food but if the food is kept for a longer time then it does turn stale and might affect your health, so better go for fresh food and it would be better if u try to complete the leftovers as soon as possible. What say?

I know when to put the food in the fridge and when to put it in the freezer. If it looks a bit too old, it goes to the garbage can. I never eat anything that might be stale.

Freezers are wonderful to help us save. When I have too much food, I put away some in the freezer the first day. That way none of it will get stale.

I agree that you need to know when the leftovers just need to be tossed out. Still leftovers can be wonderful. I personally enjoy eating leftovers although I do know a few people that will only eat the food the day that is cooked, and hate having leftovers. Personally, I would prefer to have leftk aovers than have to cook a meal from scratch everyday. Even articles on Time Management suggest making meals ahead of time for the week.

I usually cut the turkey meat and freeze in small packets and then use it as pie fillings or just heat in microwave and have it with salad or baked vegies if the weather is cool or as filling for pizzas! nothing ever goes to waste. Happy New Year to you and family...salud!!!

I don`t have a deep freeze so I don`t have too much space for freezing. But I just learned today that my youngerdaughter got a deep freezer from SAnta. As I live near her (and probably will help her to fill it) I asked her to give me one of the selves for my use meanwhile. In a couple of days, my apricot tree will have ripe apricots and I don`t want to have to process all of them at once.

I too indulge in lot of leftovers. Most of the time, Me & my mother have lunch with leftovers of previous night. Sometimes, we have 2-3 days back leftovers also Of course they have to be in edible state or else we will end up with serious stomach problem. We mostly store the cooked food in fridge, which helps in keeping the food in good state even for 3 days.

I check leftovers as even in the fridge, someof them don`t last too long. Rice can stay in good shape there for a week, but chicken broth or suffing won`t.

Dear marguicha Someone has to do with the left overs... and so it is me here... just because I am all alone. But even when wifey is here, I prefer her taking the fresh food and I go for the left overs. But then, when wifey is around, we do try and re-do something of those leftovers and many a times we end up with something ummm... fresher version of the leftovers.

It's great that you can have different things to choose to eat before new year coming.My mom prepared a lot for the coming new sign and we family stay together to go through it and that's really enough.I love life especailly doing things that i like,also with great food.

we still have macaroni salad. we have to buy again tomorrow and cook food for new year's eve and to be served the next day, jan 1, when my siblings and their families come over. it's funny isn't it? you cook so many dishes and feel good that you don't have to cook for a while, and then feel tired of eating the same stuff.

I really don`t eat the same stuff as I always do something else with leafovers. There`s not a single dish I love so much as to eat it every day.
