A Few Good Side Dishes

I'm getting the cooking itch, and I know what meat...or rather poultry. I'm planning on Chicken Cordon Bleu. I'm a two side person by nature. My Problem: Cheese is a good thing! Too much of it..not so much. Cordon Bleu already has cheese in it. I was thinking either loaded baked potatoes or loaded french fries as one of the sides, but the third...I don't know. I don't want a cheese overload and I feel like fully loaded baked potatoes/french fries might be the limit. Any suggestions? I'm not like hurting here because I would have to do this on my day off and I don't know what that day off coming up is right now because that schedule has not been made. But I want to know what Im doing before then so I can get one of my other friends to take me to the store so I can get the stuff that I need for this. Me and my roommate haven't had a home cooked meal in a couple of weeks...Id like to break the ice with something awesome. Any ideas? The suggestion I use gets my favorite! (note I am allergenic to mushrooms)

How about a nice salad with lettuce tomatoes onions cucumbers croutons. Or you could do sweet potatoes instead of regular baked and put some butter and brown sugar on them. How about garlic bread as a side? Or you could do what my hubby has done before get some baby carrots in a bag fresh not canned and boil or steam them then put butter and brown sugar and maybe some maple syrup on them for flavor.

Why not have some greens in the form of salads? Of veggies mix, like the California mix or something, I forgot what it's called but its got carrots, corn, and broccoli. You can't go wrong with veggies!

I usually serve only a side dish in the main course. I would do the baked potatoes, but would probably have a nice salad to eat as a starter. A greek salad is one of my favorites and you don`t have to put feta cheese on it if you are using cheese elsewhere.
