Lemon pie filling?

I bought two boxes of lemon pie filling when it was on sale. I want to make something like cupcakes or muffins. I find lemon pie is such a hassle. I will use one and them save the other for another time. I was debating whether cupcakes, muffins or even squares. I love hearing how others would use them and get ideas.

I use those premade tartlet shells and fill them - it's very easy and you basically have tiny pies.

I bought a box of pie mix, you just mix water and roll it out. But I have strawberry pie filling I want to use with that.

You can even put it in a cake mix. That would be good.

I love using lemon pie filling mixed with coolwhip or whipping cream as a topping for angel food cake. I've seen quite a few lemon filled squares on facebook lately as well.

It sounds delicious with mixing it with coolwhip and just eating it out of the bowl. I was looking at some squares the other day I may try.
