Making wine

I like home made wine...in fact I make my own wine at home...it's food...a little finger millet...a little sorghum...a little maize, is all I need for my ingredients. You see...I can make fruit or cane or beet root based wines also but I do not like them...I do not think it is food like cereal based wines. Any way, my major problem is preserving. This stuff must be taken within 18 hours...otherwise it goes stale. I wonder if you have some advise for me.
