Making Pumpkin Muffins / myLot

It's that time of year when everything turns to pumpkin something or other. Today I'm baking some pumpkin muffins using a tried & true recipe which you might have already heard of. Simply take one 16 oz can of 100% pumpkin and mix with any boxed cake mix (dry) and bake in your muffin tins. They are healthy and delicious and my favorite cake mix to use is either carrot or spice. I have used chocolate and those are yummy too especially with a dollop of cool whip. It's my solution to enjoying something delicious. Have you ever tried this recipe?

I have made pumpkin muffins, I have used a different recipe, I do not use cake mix, I used my muffin recipe as a base and I cooked the pumpkin in the microwave before. I always add a little cinnamon, it is so good with pumpkin.

@Juliaacv In the microwave a cook the pumpkin for about 8 minutes. I cut it in one inch pieces first.

Do you just dump the dry cake mix without adding anything else like the eggs?

Yes, take the dry cake mix and blend with the pumpkin and then bake. You don't need to add anything else

I have not tried this recipe, but I think that I will make a batch for next weekend, I also love cranberry-orange muffins. Cranberries are easy to find at this time of the year.
