Making Pumpkin Muffins

It's that time of year when everything turns to pumpkin something or other.
Today I'm baking some pumpkin muffins using a tried & true recipe which you might have already heard of.
Simply take one 16 oz can of 100% pumpkin and mix with any boxed cake mix (dry) and bake in your muffin tins. They are healthy and delicious and my favorite cake mix to use is either carrot or spice. I have used chocolate and those are yummy too especially with a dollop of cool whip.
It's my solution to enjoying something delicious.

Yes, take the dry cake mix and blend with the pumpkin and then bake. You don't need to add anything else

no but i may try something similar since there is also an older can of pumpkin in the cupboard i should use now that you remind me

My husband loves pumpkin everything so I will try this out.
