My Morning Muffins

I love muffins and used to bake them all the time when my kids were small. Even after she retired and was living alone, my mother made them at least twice a week, as she loved them, too. I hadn't made them in some time, so decided to this morning. And I have to say that they turned out better than they ever did, because of one simple little rule, or rather, the breaking of that rule. In all the muffin recipes I've ever read, the instructions always say to "Fill the muffin two-thirds full." I've always done that, and my muffins always came out flat. They tasted OK, but I much prefer muffins with big rounded tops. I've always been afraid, though, that overfilling the tins would result in the batter spilling over and making a mess. Well, I was wrong, as I found out today when I broke that rule and filled them right to the top. The photo shows how nicely they turned out and with no mess. And are they ever good, too! I once made these muffins so often that I have never forgotten the recipe. I had a few blueberries and blackberries left in my snack bowl, so I threw those in, too, along with some nutritional yeast. (More about that in another post.) It took all of 10 minutes to throw the ingredients together, another 5 to get the batter into the tins, and 20 to bake them. So, in just a little over 30 minutes, I had nice hot homemade muffins for breakfast. And they taste as good as they look! (Photo is Mine)

I flunked at making muffins. But our grocery store sells muffins that are fresh baked and they are out of this world. I buy a few and freeze them for those morning I need a cranberry/orange muffin.

@Raelove I worked for Dukin' in the regional office for 10 years and their muffins are the best anyplace. I never ate a donut in those years, but I did enjoy the muffins.

@AbbyGreenhill The only thing I like at DD's are the Munchkins, especially the glazed ones. I never buy them, because I have no self-control.

I enjoy baking muffins too, mostly carrot and bananas ones with added chocolate chips. Your muffins look so happy there, just waiting to be eaten.

@garymarsh6 As I stated in the post, they take a grand total of 30 minutes from bowl to plate. A nice way to start the day: self-sufficiency and a nice treat with no preservatives!

Yes, they do. Many years ago, in my high school home ec cookbook (Betth Crocker's binder edition), I found the recipe for Basic Muffins, with a Sweeter Muffin version, as well. I made them so often I never forgot how. Muffins are considered, as you know, a "Quick Bread," meaning that you can have a bread product on your table in a lot less time than it takes to bake yeast bread. Works for me!

Filling them 2/3 isn't enough. The tins have to be full, as I have found out. Live and learn!

My muffins always come out flat too so next time I'm going to fill them all the way and see if they come out as big and round as yours.

Yup. That's the idea. I have always filled them 2/3, and the tops never even came above the edges of the tins. I will be filling them to the top from now on, believe me.
