I am trying to be healthy this week so decided to have some vegetables and a fried egg (fried in no calorie oil spray) in a sandwich. The sandwich will have mayo (light) and salad. The vegetables will consist of peas, carrots and sweetcorn. I think it is a new method of me trying to get more veg in my diet so having it in a sandwich will work as I am sure it will taste nice :D Have you ever tried vegetables in a sandwich with a fried egg.

@salonga It is worth a try. Put some sauce in it too so it is not too dry :D

I've made what's called a Western sandwich, which consists of an egg scrambled with diced onions and green peppers. That is actually delicious. I've never tried incorporating other vegetables into an egg sandwich, though.

@gudheart I find that eggs go with so many things, really. When I make a package of Ramen noodles, I fry or poach an egg to go on top of them. I also am seeing lots of recipes that combine eggs with tomatoes in various ways. One recipe is to simply make a sauce with canned crushed tomatoes, peppers and onions, and to cook the eggs in it slowly. I think we are limited only by our imaginations and cultures when it comes to cooking. There are no hard and fast rules, other than those we make for ourselves.

No, quite frankly this is something that does not sound appealing. If I want to eat more vegetables I prefer to make a salad and add boiled eggs, it's a lot healthier.

No, I haven't tried vegetables in a sandwich and I won't try it as it does not sound good to me. I like my veggies on the side with my meal not in a sandwich.

If I make sandiwich with vegetables then I wish to avoid eggs. If I use egg fry then I prefer to avoid vegetables with the same. This is my way of cooking.
