Fried Egg Sandwiches

I grew up on a farm with many animals, including chickens, lots of chickens. Lots of chickens meant lots of eggs (and lots of fried chicken!). I'd guess that we ate fried egg sandwiches about once a week. I realized that we don't have them often around here. And on the tight budget we are are on, perhaps we should try to have them more. And the way I make fried egg sandwiches is delicious. Fried egg sandwiches, ala Jill, are made with fried eggs (of course), cheese, onion, pickle, mustard, and toast. Tonight's dinner: the yummy sandwiches and fresh spinach. Overall, it was a pretty tasty night! What do you put on your egg sandwich?

The only thing I put on fried egg sandwich is salt. Occasionally I'll put bacon in too - lovely.

I like a little bit of cottage cheese cooked in with my scrambled eggs, but my hubby prefers a little bit of red onion and shredded cheddar cheese in it. And of course on some twelve grain bread, lightly toasted. Our son likes hot sauce on his eggs-eww.

I love to put Sriracha on hard boiled eggs. I'll pull one out of the fridge, cut it in half, put a dot of sriracha on each side. doesn't even need salt that way

I do not make egg sandwiches, but I like fried eggs served with toasted bread, but in a dish.

I had friend egg sandwiches this morning for breakfast! They were delicious! From the looks of your ingredients above, the only thing I do differently is add a dash of mayo as well.

@jillybean1222 Yeah, I'm a huge mayo fan. Neither of my kids like it, but I would put it on everything if it wasn't so high in calories! lol

@moffittjc the only time i use mayo is on BLT's (a must, but a very, very thin layer) and i'll put a little in egg salad and chicken salad.

i'm sure mayo would be ok, but i don't love it, so i figure i may as well skip those extra calories... now my dad... he LOVES mayo... (i always think of him when i think of mayo)

I find fried eggs give me a stomach ache but I can eat scrambled eggs or an omelette, or even egg salad, but there is something about fried eggs I can't stomach. I do make them for my husband for dinner when he works nights and doesn't want a heavy meal when he wakes up. He likes them with melted cheddar cheese and mayo on toast.

that's weird. is it possibly the grease? do you use that same grease in other foods? i usually fry in olive oil, though sometimes will use canola or when being extra good, pam.

Anne came up with the idea of putting an egg in a shallow dish, grating some Parmesan cheese over it, adding some Italian seasoning, salt and pepper and microwaving it on a "melt" setting twice, then putting it it on toast or an English muffin. I eat one sometimes before I go to work and it is quite filling.

We have chickens too and one of our favorite things for breakfast is a fried egg sandwich. Hubby prefers mustard and cheese, I prefer mayo and no cheese. There also has to be a little lettuce and tomato along with the onion!

My dad puts Mayo on his, but I think he would put mayo on pretty much anything if you put it on bread. :-) Funny how mayo makes me think of my dad

Fried egg sandwiches sound good. We always fry egg and put between two slices of bread, and not adding others. Sometimes we just add tomato sauce. It sounds so much fun that you grew up on a farm.

That sounds delicious. Usually mayo, mustard, cheese, onion and garlic powder, toast. Sounds like my sandwiches. Maybe I'll do it for tomorrow's lunch.
