Easter Dinner Plans?

Well, I've went from a laid back Easter weekend to hosting my family for a barbecue/Easter dinner.
I want it to be pretty laid back still. I have too much going on right now to add another layer of stress on me. So I'm planning to keep it fairly simple.
That said: I still love to play hostess.
So... what are your favorite things to have for Easter dinner? Dessert?
I'm probably going to make a couple lemon meringue pies. That's my Easter dessert tradition (when I do happen to cook for Easter).

Your family is adorable! I will have a laid back Easter with just my family ... having brunch together.

@DeborahDiane it was nice to spend time with my parents & i know they were happy to see some of their grandkids too. it wasn't one of our "normal" traditions, but it turned out so nicely

We're ducking out of an invitation for dinner, its too far away, and I am still not completely well and don't want to spread my germs or wear myself out. I am sure that you'll make a wonderfully delicious meal and everyone will have a great time.

Our traditional Easter menu is usually composed by a salad with eggs and roasted lamb and potatoes. For dessert anything with strawberries. I am going to prepare a strawberry shortcake and no lamb, poor baby animals I cannot stand to eat them.

@jillybean1222 To be honest I like the taste, but I do not like the idea to eat a baby animal.

last year i made a rack of lamb for the first and last time. the seasonings were amazing, but it turns out that my kids aren't fans of lamb. neither was i.

oooh, cheesecake is a good idea too. i was trying to decide on another fruity dessert in addition to the lemon meringue pies. i was thinking of a fruit tart.... i could do a fruity cheesecake.

our easters vary, it seems, though traditionally, we eat brunch at a restaurant. but since my husband has to work, we aren't doing that this year.

We tend to have a ham for easter. I'll be working that night unfortunately. I'll still eat an easter dinner but it won't be relaxing afterwards as I have to head to work.

We usually have ham and this year my sister-in-law is the one who is cooking. I bought a wonderful home-baked pound cake to bring as my contribution.
