Homemade Caprese Salad

There is nothing I like more in the summer than a Caprese Salad which is simply slices of fresh mozzarella and ripe tomato topped with fresh basil, extra virgin olive oil, kosher salt, and cracked black pepper. Restaurants will charge you a pretty penny for this, but there isn't anything complicated to assembling this "salad" at home. This is a good thing because I love to have it often when my basil and tomatoes are ready. I don't even like tomatoes in their "whole" form regularly but I can't get enough of them when they are in Caprese form. The colors are so pretty: red, white, and green like the Italian flag. I'd love to show you how nice this dish looks but I already ate it! hahahaha

Yes! You are right! Restaurants will charge an arm/leg for Caprese Salads. I bet your home made version is even better. :) Enjoy!
