What is the "Secret" to oven baked French Fries at home?

Sometimes they are limp and greasy, sometimes over done and too brown. Maybe the best way is the frozen food aisle at Trader Joe's. I read that soaking them in some water and baking soda was a great thing.
So, do you do fries in the oven or on the stove? Frozen or do you make your own? Potatoes are important to me since they are my favorite vegetable. Now, I am very hungry.

Lany....I love anything ...anything vegetarian fried! Have you tried dipping bread in gram flour batter mixed with salt and a little bit of chillie powder and deep fried! Yummy yummy. And even spinach, green peppers (yours may be pungent so may be you need to boil them a bit in salt water before using them), and then aubergines directly on pan...all very good for tongue but bad for waiste...if only my body organs did not enjoy that kind of democracy...

I usually make frozen when it comes to fries but never bake them quite right

I make my French fries from scratch and I fry them in a pan on the stove, with a lot of olive oil. I cut them and soak them a moment in very cold water and then I pat them dry very well before adding to the HOT olive oil. The secret to have them crunchy, when they are almost done, remove from the pan, let rest two minutes and put them pack in the pan for another couple of minutes.

@JamesHxstatic French fries are not really low calorie food, but I like to have them time by time.

hmm, ne'er heard 'f the backin' soda schtuff 'fore?? might've the need to give such a go. 's fer the store bought taters? sadly most're made with soy/gluten 'n i can't partake'n neither. i do make 'em here't the house though from 'scratch'. ne'er 'd any come out limp 'n greasy, but've fergotten to turn 'em a time 'r 2 'n some came out a wee bit 'n the o'er crunchy side, lol.

We bake ours in the oven - but I don't cut fries like "fries". I just slice them into about a 1/2 inch or so discs, toss 'em in olive oil, salt and pepper, garlic powder and maybe some paprika if I feel like it. Put them in one layer (none overlapping) and bake 'em til they're cooked. Maybe they don't look like fries, but it does the trick.

I don't make French fires at home, not for years. I buy and bake tater tots. The length of time in the oven determines their crispiness. When I eat at Bad to the Bone, I take home the extra French fries. I reheat them in the oven the next day. They come out fairly crisp, if I leave them in long enough. But, as you said, they can burn if not watched.

I like my fries limp and not crispy and hard to eat. Have to be baked just the right amount of time. We bake as much as possible. My daughter cuts the potatoes into small wedges and puts oil and condiments to taste on them. Bakes them in the oven. They are so delicious. Potatoes have always been my favorite veg too. I am from Idaho and so it is a gibben. Haha

If my dad is cooking them he fries them in the fryer I bought him for Christmas a few years ago and they always turn our golden and crispy. I prefer to make the in the oven just because they are better for me that way. I like mine to be a little brown and hard when in the oven so I keep them in the full recommended time that comes on the bag. Potatoes are also my favorite.
