Pumpkins

I don't care for pumpkins or squash that much. I do enjoy a pumpkin pie on either Thanksgiving or Christmas however. And, I like the pumpkin seeds my daughter usually makes each year. I was just looking at an article about pumpkins and thought I would share some of this knowledge about this orange vegetable: You want to pick the smaller pumpkins to bake with. The larger ones are thin skinned and stringy. The smaller ones, called sugar pumpkins, are about 5 to 7 pounds are best for cooking. You can even store a pumpkin in the refrigerator for up to a month. You can roast the seeds and put any of your favorite spices on them for a great snack. Preheat your oven to 250 degrees, carve out the seeds, separate them from the strings some will have, and then boil them for about 10 minutes. Toss them in some oil and then spread them out on a cookie sheet. Toss them every 10 minutes or so baking them for an hour in the oven. For every pound of the raw and untrimmed pumpkin you get about one cup of puree. This puree can be added to breads, casseroles, soups and granola.

I didn't like pumpkin as a kid (I didn't even like pumpkin pie) - but now I just love it. But I am so lazy I use pumpkin out of a can for recipes . We do roast the seeds when we carve out pumpkins for Halloween, oh but I never thought to boil the seeds!

Love the seeds. I think boiling the seeds makes them easier to eat. I don't recall ever having pumpkin pie when I was a kid.

@much2say .....We always had apple when I was young. I think that's why I go in for the pumpkin pie. I read instructions for doing the seeds and that is the first time I saw that you should boil them first. I think it makes them easier to eat. They can be pretty pitty.

@celticeagle Fresh roasted seeds are so tasty! Boiling makes them more digestible? We always had a choice of apple or pumpkin for Thanksgiving . . . I always picked apple but now I pick both .

The bigs ones are stringy and there is less flesh/ pulp. Up to about 7 pounds is good.

I must say I am not particularly a fan of pumpkin although my wife has made a cake out of it once. They are becoming more and more common in the UK but mainly for Halloween.

I always plan to do more with pumpkin, it's good for you, and never get too far. but pumpkin stuff is quite good, in bread and such

I am not a fan of pumpkin pie. It's a texture thing for me. I have tried it a few times but it's not for me. I do like the pumpkin seeds roasted in the oven with spices though. They are a nice treat.

Pumpkin pie taste like sweet potato pie. You can make pancakes from the puree of pumpkin or the whole pumpkin.
