Breakfasts and lunches prepped

I just spent some time chopping, chopping, chopping. I have stuff ready for my breakfasts and lunches for the week. I chopped onion, zucchini, red pepper, and tomatoes and put them in a container. They are ready for me to use each morning when I make my scrambled eggs with veggies. I really should have taken the time to cook them as that would have saved me time each morning but I didn't. At least I have everything chopped and ready to go. I also chopped up romaine hearts and put them in Rubbermaid containers for my lunches. Now I just need to add leftover protein from the night's dinner on top to finish them off. I had some chicken thighs so 2 of them are already done. I have 2 more to go. It feels good to have everything ready. Makes dealing with getting ready to go to work much easier.

I like to prepare my lunches and other meals ahead of time too when I can. I have to get up pretty early in the morning for work, plus I have to get both of my kids off to school. So, it doesn't leave me much time in the morning to make lunches and meals, so anything I can get done the night before is a big bonus for me!

I need to do that in order to stick to my diet. We will be going food shopping next week and if you don't mind I'd love to get some advice on what foods to get and how to go about prepping meals
