Tomorrow is Ravioli Day

In my family we have homemade ravioli as part of our Christmas dinner. Yes, we are Italian. So tomorrow is the day that we are getting together to make them. It is a whole production with the men working the KitchenAid to make the pasta and roll it out. The women actually form the ravioli. We have a blast. Before the KitchenAid came into our lives, they did it with a hand-cranked pasta roller and that was much more difficult and time-consuming. Nowadays we can bang out 800 ravioli in just a couple of hours. So that's what I'll be up to tomorrow. The tradition continues!

I have never made homemade ravioli. I have only eaten it at a restaurant or from a can.
