Cheesecake Help Needed

I have a big problem, as can't get the cheesecake to look done. Its says stick knife in and it should come out clean. This isn't happening and its already been in the oven way past the time. Any ideas welcome, as I have never may it. Its in the oven now and based on how soupy it looks I will never do it again. I have an almost brand new oven and this has never happened before with anything else I baked.

It seems that you got a wrong recipe. The modern books are cute, but no recipe is written correctly, I have thrown several in the bin, because I hate to waste money and throw food.

I went to read about how to make one and this cookbook forgot to list steps that a beginner wouldn't know now. I learned more about water baths and the reason to cook that way. Now I understand why a swirled cheesecake is so expensive in my local stores.

@LadyDuck We will be making cookies on Saturday, so that should be easy for us. My daughter works until 4:00 pm and right after dinner we will get started. I know we need to make several kinds for Santa.

Happy new year! I know it's too late for my answer but maybe, there's something lacking in the recipe. I usually make cheese cake out of sponge cake and the cheese cream is only a filling in between the layers and it's the way I learned it in the coffee shop where I worked before. I didn't have to bake the cheese cake except the sponge cake.

My daughter and I plan to try a new recipe next year. This one was missing information and it was one of the really tiny cookbooks that looks cute, but isn't useful. We learned a valuable lesson and next time will use a recipe that others have reviewed.

She did use a water bath, so that wasn't the issue. Its missing steps and a beginner like us just followed the recipe exactly. We needed to change the thickener ratio and now we have several recipes and am sure it will work next time. Thanks for posting.

We followed the recipe exactly, so clearly its not one to be made again. This one was from a cookbook and think there is missing instructions from reading many boards online. Its a shame, as its a cute cookbook.

Son2, who is an excellent baker of cheesecakes, tells me a cheesecake is done when you press lightly on the center and it springs back into shape.

Its not doing that and will be using a different recipe next time. We sliced it today and its done, so hopefully the people eating it will be fine with our attempt. Next time we will be better prepared and take more time. Thanks for posting.

How much flour should be used to make cheesecake? I want to inform my daughter what needs to be used next time. Thanks for the help.
