Made a lasagna for tomorow

I can easily make a lasagna without even thinking about it but I wanted to make a lighter one so I used a recipe from The Herbal Kitchen cookbook tonight. I like it because it layers red sauce and pesto sauce. I like the idea of a lighter meatless lasagna and this one uses oven-ready pasta sheets which is even better. It took some time to make the various sauces (red, white, pesto) necessary to make the lasagna but it was worth the effort. Now it is all assembled and tomorrow I just have to pop it into the oven and sprinkle some mozzarella on top. It pays to do this stuff ahead of time!

We always make lasagna w/o meat and have learned how to do this w/o cheese and use zucchini in place of the noodles. This is great for anyone who can't have cheese, does not eat meat and can't have gluten! BTW, it is delicious. Love the idea of doing thing ahead of time. It does make life a bit easier.

I have had lasagna that was over done and too much to eat. Most of it would go to waste, a shame because it was delicious, just way too much.

My usual one is way over the top. This one is much simpler and lighter.

Sounds like a good "Lazy"sagna. I'm not a big fan of them really... but this one doesnt' sound tooo bad.

I bet it will be good too! I like making weight watcher recipes whenever possible because most of them are delicious and lower in calories, unless you eat too much of it, which can be a problem!
