Heavy And Rubbery Pancakes

We were given a huge bag of instant pancake mix, as in 4.5 kilos, so we have pancake for breakfast or merienda (afternoon snack) once a week to try to use it all up. I don't know if my mother follows the instructions at the back, but the pancakes always come out heavy and rubbery. So I treat them like slices of bread. Spread butter on the left, maple syrup on the right, fold it in half, pick it up, and eat it as a sandwich. Sometimes I use margarine and jam or jelly, sometimes sandwich spreads like peanut butter or cheez whiz. What do you put on your pancakes that's different from most people? What's the most unique pancakes you've eaten? For those who use instant pancake mix, how do you avoid heavy and rubbery pancakes?

Maybe depends on the brand. I never had rubbery instant pancake.

me, personally, i always buy philippine brands like white king and maya. but this was a gift, not a local brand, and you know how some mothers are like. they prefer to "estimate" than read the instructions. oh, well.

That's the brand I use! We have them down here too - but we do have to go to Asian grocery stores to find them...

I have never liked pancakes, why they are coming out so heavy and rubbery could be because they are old. But I'm not sure, just a thought.

If it's thick and heavy like bread then put hotdog in between, then it's waffle dog, waffle dog is made of the same stuff. I like mine thin, just a little thicker than crepes, I like it with butter or syrup. Sometimes I eat it with a slice of cheddar or yes hotdog

@hereandthere exactly, that is the " poor man's" waffle dog, yes literally it will sell like hot cakes, because a lot could afford it even the kids. On the streets. Better than buying in an expensive convenience store

i have a relative who is selling corn dogs by sticking a small piece of hotdog on a toothpick, dipping it in batter, then deep frying it. it's a hit with kids and sells - like hotcakes!

There's one brand from the Philippines that I like to use... White King, I think what it's called and it says 'Hotcake' on the box... If I follow the instruction on the box, it always comes out nicely - fluffy and has just the right sweetness even if we eat it as is...

I have been eating pancakes made out of cassava flour and almond milk. I think those pancakes are healthy since they are both gluten and lactose free. There has been so much buzz lately about the benefits of cassava. And the taste is quite nice too

@hereandthere cassava flour and almond milk are sold in most supermarkets and so are easily available. In fact my mum suffers from lactose intolerance and was following the 'paleo' diet and so we had been looking for subtitutes for milk as well as regular flour. And i came across a site online where i found this recipe.

i agree that pancakes from cassava flour and almond milk would be much healthier, but i haven't heard of them here in the philippines. we do have cassava here, but not almonds. how is pancake from cassava flour and almond milk made in mauritius - from scratch or are instant mixes available?

We make pancakes from scratch and only eat them with real maple syrup. Perhaps more liquid needs to be put in the batter? And perhaps make sure it's not over mixed? I don't know if I've ever had a "unique" pancake . . . I know Hubby has thrown in mini M&Ms in there before .

@hereandthere It does! I am not a creative cook, but Hubby can be. With the kids, he often puts in a "secret ingredient" and the kids already know how secret ingredients usually mean chocolate!

I don't use instant pancake mix .. I use self-raising flour .. and sweeten it with fruits like bananas, berries, apples or pears ....

I very rarely make pancakes, but when I do I use the ready mixed ones. I find that if I make them very thin they come out fine.

@hereandthere I don't really know the difference between crepes and pancakes - I thought they were one and the same. I'm not very fond of waffles.

when my sister cooks pancakes, we would top these up with condensed milk, because we don't stock maple syrups or whatever syrups should top it. besides, the pancake can be eaten solo, with coffee or hot chocolate. i love the pancakes of the jolly bee

condensed milk is definitely unique. my mother sometimes puts it on fresh fruit. it's been a while since i had pancakes at jollibee or mcdonald's for breakfast. if i did, i tend to order the rice meals to make it brunch.

@ridingbet although i have a sweet tooth, i never liked condensed milk. i love the taste of evaporated milk on oatmeal, champorado and halo-halo.

If you add milk instead of water to the instant mix they will be fluffier. Also adding an egg will make a difference too.

i do that, use milk instead of water, when i'm using the local brands that we usually buy. i haven't added an extra egg yet, but i've read about it, too.

My brother gave us a huge box of an important brand of pancakes last year. I know I tried to follow the directions but my pancakes always came out rubbery -- just like your mom's. My husband tried his hand on it and they came out perfect on his second try. He says he doesn't follow the instructions anymore. He adds more milk and water and mixes the batter thoroughly with just one egg.

Waaaaaaahhhh!!! Pancakes!! I like the usual. Butter and syrup.... Urrgghhh!! you just made me crave for it while its almost dinner time. Anyway, in The Philippines, you can eat anything anytime. lol! Even have lechon for midnight snack ahahahaha kidding. lol!

true. there are so many eateries here now you can eat out from breakfast to midnight snack. no marketing, no cooking, no dishes, as long as you never run out of money. hahaha! it's been a while since i've had lechon, though. i love lechon paksiw.
