What's for dinner? April 18

What's going on the dinner table tonight? Share with us! We are having grilled pork chops seasoned with Emeril's Essence. To go with them I am making mashed potatoes, steamed spinach, and steamed cauliflower. I'm making lots of veggies so I don't fill up on potatoes. I gained a few pounds while in Mexico (not working out plus lots of beer, guacamole, and chips!) so it is time to buckle down and watch what I eat. I'll have a couple of bites of potatoes but that is it! That's what's happening here. What are YOU having tonight? I want to know!

I haven't cooked a real dinner since our Easter meal on Holy Thursday evening. Hubby immediately started working nights after that so I just make him a fried egg sandwich. I should plan a meal for tomorrow night. Yeah, I think I'll go take a roast out of the freezer and put it in the slow cooker tomorrow. I've also been getting on the treadmill pretty late in the day. There was no time to make hubby dinner tonight before he headed out to the movies. My daughter put a frozen pizza in the oven and I had a couple of pieces of that.

@NJChicaa Haha the meal we had was not exactly a healthy one but it was for sure very light, it was a roll, a few slices of lunch meat and left over potatoes. But the next few nights we had salads. Just because of all of that unhealthiness haha

I don't love pork chops but I dislike chicken and have it every day on my lunch salads. . . and we can't have steak every night. So, we have pork chops sometimes. Ground turkey turned into turkey meatballs or turkey meatloaf sometimes. I still can't stomach fish after my 2 transformation challenges. Gave up shrimp after reading about how gross Asian shrimp was. Local shrimp has to be deveined and that is quite a process that I can't be bothered with.

That sounds delicious my friend. I don't care much for cauliflower these days. I had Gorton's Fish Fillet with leftover seasoned fries and (canned) black beans. I had water and a Chobani banana strawberry smoothie to drink. I'll be doing a mini Marie Callender's chocolate silk pie for dessert.
