Made up a dish the other day. I used about a fifth of pumpkin and roasted it, skin on with olive oil drizzled on it. At he same time, I dry fried 4 smallish chicken thigh fillets seasoned with plenty of dried onion, garlic powder Cajun seasoning, paprika and plenty of cumin.
I mixed the two cooked ingredients together, gently, with a little more olive oil then added a handful of walnuts and some crumbled feta cheese.
The main spices were the garlic and cumin and you could use pine nuts instead of walnuts. You could lose the pumpkin skin too if you prefer it.
It's kept well in the fridge for several days and I'm fairly sure it would freeze well also.

Sounds good, however I am the only one in the house that likes pumpkin. It would take me a long time to eat a whole pumpkin.
