My kitchen smells so good!

I've always loved the smell of onions and garlic cooking on the stove. I have found something that smells even better than that, though. The smell of poblano peppers roasting directly on the burner. Oh wow it is just amazing! All you do is light your gas burner and put the raw poblano directly onto the flame and let it char away until it is completely softened and black on the outside. Then you put the pepper into a bowl and cover it with plastic wrap. At least that's what I do. Some people put them into a brown paper bag. You basically need to put the peppers into something to trap the heat so they continue to steam for a little while. Then you can peel off the blackened skin and get to the lovely delicious flesh of the peppers for whatever dish you are using them for. I only did 2 peppers tonight. I've done up to 8 at a time when I'm making tamales. I want a roasted poblano candle.

I am sure someone somewhere will or has made such a candle. I don't think I've ever smelled poblanos being roasted that way. I know I had a friend once who would do this but with bell peppers.

That's true. My husband has had candles that smelled like: sawdust, grass, and bacon. So, if he can have them, I'm sure there is a pepper candle out there somewhere! haha Roasting poblanos like that is very common. I do it often in the summer when I am in Mexican food mode.

@NJChicaa The onlyt hing I've ever made mexican style was Taquitos, quesadillas and tortilla soup. Not a household full of latino cuisine fans here..

@ScribbledAdNauseum My husband and I love it. One of my favorite ways to use Poblanos is to roast and peel them, remove the seeds and slice them up into strips, caramelize onions in a pan, add the poblano strips, and add a bit of heavy cream, salt, and pepper. Cook down into a delicious mixture. Then use it as a filling (along with Mexican blend shredded cheese or shredded cheddar) in quesadillas. One of the best quesadillas you'll ever have.

No they aren't. They are a larger dark green pepper. Generally the bigger ones are less spicy. I really like them!
