Made my first egg bake!

I was trying to figure out something healthy I could bring to work instead of salads, which I am slowly tiring of, so I found this very simple and healthy recipe online. Apparently its quite the common dish - guess I live under a rock! The ingredients are chopped spinach, red onions and red peppers and of course eggs. All you have to do is put them on a greased muffin tin and throw em in the oven for 20ish minutes! I tried one and its pretty good! And it gives me something to eat for the next few days. My only complaint is that I dont think I mixed the eggs well enough as you can see blotchy white bits. Not sure what that is but Im eating it regardless. Lol. Have you ever made something like this?

If we ate eggs, we would eat something like this. As we don't eat eggs, we would eat the spinach, red onions and red peppers instead @maezee We like salads enough that we have eaten these regularly for years. Maybe switching the types of ingredients in your salads could help.

It looks so good in fact i once made an egg quiche in the microwave. It was a quick egg quiche recipe. The ingredients that I included were cheese, chicken, pepper, morsels of bread. It was not that bad

@Nawsheen oh, so quiche has bread in it. it sounds like you have to cut it into small pieces?

@maezee I would love to eat a lot of eggs. But it is not required for me to have more than two eggs a day.

I make quiche, so that is similar. I have never made mini ones though! That is a good idea. I think the white part of the egg will taste just fine like that.

I think so! Quiche sounds good too. I know thats made with egg and spinach usually also. Is there some type of breading that goes on it too?

@maezee I usually made it in a regular pie crust or tart pie crusts. But lately I have just been making it without the crust to be healthier. I think next school year I will make the mini ones without the crust and freeze some. A nice change for lunches for work.

Boy, you never know what you can make with a muffin tin! Have you ever searched the website "All Recipes" they have lots of great food prep ideas.

I have had something like this since I was small. My mother called them by its french name, eggs "en cocotte". She used earthenware small pots and added milk or cream to the spinach mixture.

Yes, must be the egg whites... Looks delicious and, more importantly to me, sounds simple enough to make... Do you put some cheese too?
