What was for dinner? June 25

I am getting a late start on dinner this evening due to my nap. I didn't wake up until 6:30 or so which didn't have me in the mood to eat until about now. I am making a simple pasta dish that I've described here before. It is long pasta (linguine, spaghetti, etc) with a sauce made with roasted whole garlic cloves, extra virgin olive oil, crushed whole tomatoes, red pepper flakes, kosher salt, and fresh basil. It is really delicious and much more than the sum of its parts. I don't have to have any meat with the meal as my husband isn't here tonight. Meatless Sunday if you will. That's what is happening here. What did you have?

It will probably be a single all mixed vegetable curry with nice bread and Butter. I like it very much. I will have it on every Mondays for my Dinner.
