Sunday Cooking-What I made!

I started out this morning defrosting a pound of ground pork wondering what I was going to do with it. So I opened up the cupboard the refrigerator and ended up putting together a baked pasta. Spaghetti sauce with fresh basil, oregano, garlic, onions, crushed tomatos, mushrooms and the ground pork. I had to small partial packages of rigatoni noodle and another one, but I can't remember what it was called. Poured the sauce over the pasta, into a baking dish, topped with Parmesan cheese! Tonight, even though I have an entire dish of pasta in the frig, I cooked up some smoked jalapeño pepper sausage with onion, garlic, bell peppers and potatoes, seasoned with a little Cajun spice and crushed red pepper. When I am in the mood to cook, I cook for an Army! What did you make to eat today?

How do you cook your pork chops? I have tried many variations, breaded and fried, baked etc.

@SonjaRae we breaded them and then pan fried them. We do them many ways. We also like them barbecued or with gravy.

@Tampa_girl7 I have never grilled them, but might try that one time. Probably need a thicker cut for that. I too have made smothered pork chops! Those kinds of thints are for me, more of a colder weather food.

I sauteed veggies. For lunch I made some fajitas with it. For dinner, I ate the rest with a couple of hot dogs. It is not a great amount of food but the doctor told me to skip the meds for resistance to insuline and use common sense while eating carbs.

I ate a little of it today for lunch. I will eat it for dinner tomorrow night, then package up the rest and freeze it for another time. Otherwise, it will go to waste! How do you seal yours when you freeze it?

@SonjaRae yeah, very sound names, but I don't think they were that good (I bought the ready made sauce from the local store. I had to re-season them, a pain!).

I thought my sister put pieces of Polish sausage and sauerkraut in the freezer while I was in the hospital and I heated that up. But I thanked my sister for cooking it for me as I had not cooked and in refrigerator and my sister announced it wasn't cooked! So, I ate a 40 second. microwave polish sausage and sauerkraut and an ear of corn steamed are whAt I had for dinner!
