I Love Rhubarb

This is the time of year when my mind goes to all things rhubarb. I had 5 plants of my own but only three returned this year after being whacked down by my nephew and I will have to resort to buying it at the local farm stand, they always have plenty. Last week I decided to make a strawberry rhubarb upside down cake. Since I can't post a recipe let me just say that I made a from scratch yellow cake, (sponge) . I mixed together fresh strawberries and frozen rhubarb that I had from last year with sugar and cornstarch. I placed the fruit in a square stone baking dish and poured the cake over it. I then baked it. When it was cooked I flipped it over onto a plate and so now the fruit is on top. I served it in a bowl with heavy cream poured over. For me, this is the real taste of early summer. Sunday we had lunch at a favorite restaurant and they offere a rhubarb custard pie for dessert, we shared a piece and it was lovely. I also make a straberry rhubarb crisp which is one of the best desserts in the world. I leave the pie baking to my friend @amedeo. lol

rhubarb is one of my favourites too... I love crumble... and the upside fown pudding.. you've got my mouth watering... lol

That does look good. I love strawberry rhubarb pies but this looks like a delicious idea.

I love to make upside down cakes, apple, peach, of course, pineapple so it seemed natural to make strawberry rhubarb.

@BelleStarr .....I used to make a pineapple one for my grams every year for her birthday. She also had a huge clump of rhubarb out by the garden.

I love rhubarb as well, and this has my mouth watering. Someone brought in a fresh rhubarb crisp to share at church a couple Sunday's ago. It was delicious!

It is such a unique taste I can't really compare it to anything. It is very very tart, needs a lot of sugar and the texture raw is like celery. It is delicious with or without strawberries.

I love rhubarb too! And I believe that I have this same recipe, only I make mine in a bundt pan, and then pour the cake mix over that and when you take it out of the baking pan, and put it on the cake plate, it presents so beautifully, and delicious when you eat it warm with a little whipped cream.

looks 'n sounds divine! i dunno if'n i can partake'n rhubarb any longer? i believe such's 'mong a long list 'f 'gal, don't go there'. so many thingies disagree with the crohn's somethin' fierce.

Lol! Fredo does bake great pies! I love and crisps, but stay away from most desserts these days, except for fried ice cream and birthday cake. However, I'd try a sliver of yours any time!

I made a strawberry rhubarb pie but never tried a cake or crisp. I bet they are delicious. It certainly looks good in your picture.
