Finished the potato salad

Well, not entirely. The potatoes are cooked and dressed with white vinegar. The mayo dressing is made and sitting in the fridge. I'm just waiting for the potatoes to cool before I combine the two and put the whole thing in the serving bowl. I'm a good cook but I'm definitely not a fast one. It took me over 2 hours to get the whole thing done. (and it STILL isn't done!) When I entertain, I start preparing things like 2 days ahead of time so I'm not totally frantic on the day of the party. Anyway, it is finally finished. Now I can soak my sore body in the tub for a bit before we head out to the party.

Did you chop the potatoes before boiling? I have found that that cuts down on the boiling time. Then I mix up my ingredients while still warm. Tastes so yummy while warm...

This is the recipe I used. I have the Cook's Illustrated Cookbook but this is the exact same recipe online. I doubled it and omitted the egg. It is a very good classic potato salad that will please a mixed crowd. It isn't fancy, it isn't going to knock anyone's socks off with something new. It is called the All-American Potato Salad for a reason.
