Stuffed Bell Peppers for lunch today

From the image you can tell these bell peppers have been scooped out clean so there is plenty of room in them to stuff your favorite ingredients to make that special stuffed bell pepper for lunch.
For a healthy tasting meal all in one just add a glass of cold Texas iced tea with a lot of ice and you're on the road to culinary satisfaction.

I love bell peppers Anthony.
I had never had a stuffed one however.

Yes, the iced tea is a must do. The problem is, some people just don't eat the pepper. They scoop all the stuffing out and leave the pepper alone and that defeats the purpose. The chewy bell pepper adds depth and flavor to it. The purpose for using it is to eat the pepper, not just leave it on the plate. But some of my friends tend to do this and I think it is just plain rude. I guess it depends on ones' own upbringing. I may be from a poor family and still poor to this day, I like to eat like a KING. and I in fact, do.

I love stuffed bell peppers. I have a recipe I have used for years that has ground beef, rice and tomato sauce all mixed together and heated and then stuffed into blanched bell peppers, then baked for 45 minutes. It always turns out perfectly!
