Ready for the Weekend!

I've had a very busy week between playing with the kitten and volunteering at the shelter, grocery shopping and housework! I'm so glad it's time for a weekend so I can (hopefully) sit and read for a while. I need to get some laundry done, too! I made a wonderful dinner this evening. I found a recipe online for a Mexican meal. It's made in layers, something like lasagna, with no meat (although meat could certainly be added). It had corn tortillas, peppers, onions, corn, refried beans and enchilada sauce and cheese. SO good! 90+I will definitely be making this again and again! I'm reading an interesting book. It's called, "Behind Her Eyes" by Sarah Pinborough. There are two women, Louise and Adele. Adele is married to David and Louise is having an affair with David. And Louise and Adele have (coincidentally?) become friends. Each chapter is written in the first person of either Louise and Adele and it's very interesting. So, that's it for now! The temperature has cooled down after the heat wave, it's wonderful to be back in the mid 70's.

Those are my favorite temps! Warm and yet no problems breathing. Summer is fast coming to an end here and I really am looking forward to autumn weather!

Yes, he's here! He spent a week or so solely in my bedroom and now he's free to roam the apartment. He's 3 months old and so full of energy!

We make a recipe similar to what you are mentioning here and call it tortilla bake. We don't add meat or dairy and have to say, it is one of our favorite meals. This is one of the recipes where we add some of our homemade chili in the first layer.
