I´ll cook a minestrone for dinner.

I have been mylotting all morning and eating whatever I found easy. So now I am smelling the wonder of a minestrone that I´ll eat for dinner. Minestrone is not only a delicious soup, but also one where you can put together some vegetable odds and ends you have in your freezer or refrigerator. And I have some pesto from yesterday. So that will be it. What will you have for dinner today?

Nice. That sounds awesome. Is minestrone hard to make? I am having dinner on works dime so I have no idea what theyll be serving. So far it has not been very vegetarian friendly though which is too bad.

No. It is mainly a vegetable soup with some beans, pasta and pesto added. Add grated cheese to serve. You can check it online. I make it always when I have some pasta with pesto leftover.

Sounds like a good, hearty meal that you will be preparing. My grandmother really likes minestrone soup. When she eats this soup we usually buys it in the can. I can honestly say that we never made minestrone soup from scratch. Good luck with your yummy meal and enjoy!
