Bed time snacks

My doctor tells me that it is good for my blood glucose levels to have a bed time snack that is high in protein. I do not always do so. Tonight I am snacking on crackers spread with tarragon/lemon chicken spread. It was to be made into a log rolled into toasted pecans. I overtoasted my pecans a bit, so the dish has a slightly smokey flavor. This also has cream cheese and cheddar for a base, with canned chicken breast and a few othe seasonings. It is very tasty. Having it prepared makes it easier to have an evening snack.

mmmm sounds so tasty Heather..I had never heard of it but easy enough to make huh. Yes that might be good for you as the doc says. I just had a few Doritos oh oh hahah

If I was eating alone at night often I would have a big bowl of tortilla chips and salsa.

@GardenGerty Mine too, I try not to pack in to many carbs, but they always have pie, pie is what will kill me.

I always like having things that are easy and not complicated to make. Your chicken spread sounds tasty and a good snack rather than the standard cookies, chips or ice cream

My go too lately for protein is always Peanut Butter. Anytime I am starting to feel Low or just when I feel I need a good snack with some protein in it.
