What's for dinner? September 28

What's going on the dinner table tonight? Do tell! I'm making something that I haven't had in months! Shrimp scampi over linguine. I love the garlicky, white wine-based sauce over the shrimp and pasta. Yum! I am home alone tonight so I can have as many of the shrimp that I want and whatever is left over will be my lunch tomorrow. To make the meal healthier (and less carb-heavy), I am going to steam some broccoli and mix that in with the linguine and shrimp--a healthy "filler" if you will. That's what's happening here this evening. What are YOU having? I want to know!

It is! I don't make it often because I've cut way back on pasta and I also don't often get the opportunity to buy wild shrimp that's already peeled and de-veined at Trader Joe's.

I just had a bowl of sandwich steak over mac n cheese from Wawa that my daughter surprised me with. It's not my first choice, but it wasn't bad after I added ketchup. She also brought me a cup of coffee.

@NJChicaa LOL Sorry. I do like either ketchup or marinara sauce with my macaroni and the ketchup was the only way I could make the beef palatable for myself (and some salt). My daughter loves it, but me, not so much. I do like the meatballs over the mac n cheese, though.

It definitely wouldn't be my first choice and I wouldn't touch it after you added ketchup to it. *shudder* Ketchup is the devil.

That sounds awesome! Last night I had Tuna Helper..and tonight probably the leftovers. I had milk I simply had to use up..and TH takes quite a bit.

We were going to have shrimp scampi, but my husband has to go to the gym early in the morning and didn't want to reek of garlic. I'll make it tomorrow. Tonight it will be burgers on the grill.

@DianneN Hey, I shower. I brush my teeth. I wear deodorant. I thoughtfully drink a large cold brew coffee in the morning so I have coffee breath instead of garlic breath. Best I can do!

Since we have water problems today (it's coming out brown) I will not be cooking. Have no idea what's for dinner. Maybe I will get my hubby to go out to eat somewhere. Hopefully it will be somewhere not expensive but with delicious food.

We have great authentic Mexican places in town that are run by Mexicans pretty much FOR Mexicans. Cheap and soooo good.

@lovebuglena Not necessarily. Tex-Mex can be spicy but authentic Mexican actually isn't unless you add the hot green sauce that they like to keep on the table to the food.

@NJChicaa Yes. It is a traditional meal here and goes very well with beef stew. Its called MATOKE.
