Butternut squash soup

The weather is blustery and cool compared to yesterday. It is a wonderful day for soup. My image got all steamed up. It is butternut squash soup. I sauteed onions and garlic, added the squash and chicken broth and slices of fresh ginger. When everything was tender I pureed it all. Tonight this is what we will eat. It will have bacon bits and bleu cheese crumbles in it. On the side will be muffins. I had a jar of "pumpkin salsa" and did not care for it. It went into the muffins. I think we will enjoy our meal. I am thankful not to be outside.

We'll probably have spaghetti and hamburg because thats a nice hot meal with it being cold.

@Courtlynn He said he was scared and grossed out as a kid, getting up at night and seeing spaghetti portions in the sink and thinking they were moving. He also says he threw up the first time he ate it so his mom never made him eat the pasta again. He loves the sauce, the meat, you name it. He loves my lasagna, but I do not boil it. He says the smell of boiling pasta makes him nauseous.

Today we have the heat before the cold, I worked outside all day so the dogs would have a warm place to be, they are not happy this moment but will be soon. I am actually canning soup today, I like veggie soup and I made two huge pots and now I have one mess in the canner and one waiting its turn.

That sounds amazing, I love butternut squash but never had it as a soup! We had soup night last night because it was all gloomy and such and that is perfect for soup night.

We went to a chestnut festival years ago and they served lots of interesting food with chestnuts. Butternut squash soup was one of the things on the menu. To be honest, before tasting it there, you would never have gotten me to try it.

I wondered about your picture. I realize this is an older post but followed a squash link and found it. My sister made butternut squash soup one year and put a can of Adobe peppers into it. Boy, was that spicy but I loved it and head there now at least

I will eat a lot of soups, and a lot of squash varieties. People have told me many things that they put in squash soup, I think a little bit of spicy peppers would be good. I just found another jar of pumpkin salsa in the back of my cabinet. I may make squash soup this week.
