Making Muffins

I often make muffins and small loaves of quick bread. When I am making several kinds I use different types of pans. It lets me tell the different flavors apart.
These were made with my basic recipe, but I added pumpkin salsa, and some oatmeal for texture.
I bag and freeze the small loaves, and write labels for them. For muffins I have large and small round pans, a set of six bundt type little pans, as well as small muffin/loaves, seen here and a larger loaf/muffin pans. The loaf that appears large in the image is about 3x6, so it is smaller than any standard loaf.
These muffins will be served with my butternut squash soup for supper.

These are so easy that when I make muffins I usually make several kinds and freeze them. My grandkids enjoy them when they come visit, as a different kind of easy breakfast.

@celticeagle When you have a skin wound that needs healed, like an incision, you need to make sure you get the extra protein. Of course eating jello would help too.

If I am just eating them at home I do not usually use the paper cups. I made these in the mini loaf muffin pan so that if I made some others that looked the same I would know what these are and not get confused.

That sounds good. I do not completely leave out sugar or sweetener, but do find if I use fruits and juices I can use a lot less, or use real maple syrup or molasses which is hubby's favorite.

I was going to say, those muffins look a bit rectangle lol. But the loaf pans make sense . I only make banana bread.

Banana bread can be baked as muffins. I like doing that for portion control for me. Banana bread is yummy. I have some bananas I have frozen that I need to make bread from.

I always consider it great and safe to prepare muffins at home than purchasing outside.

Thanks, they were. The pumpkin salsa was something I bought to try but it just was not right. . . sweet salsa. It was great for the muffins though.
