The first minestrone of the season.

Although I still have frozen pesto in my freezer, today we made a nice minestrone with the first bits of fresh basil cuts of the year. I usually make a minestrone soup the day after I make pasta with pesto if there are leftovers. But this happens when we were only Leticia and I. Now, usually, there are no leftovers and we have to think up what to do every day. I am trying to use the odds and ends in the freezer in order to go to the farmer´s market and buy for 4 people. Everyone loved the dish. We had that and a salad and that was it. A wonderful well balanced meal. What did you have for lunch?

@peachpurple It is just a common vegetable soup (You dice some of the veggies) with some dices meat fried with onion. I add cooked beans (not many) some pasta (not much) and pesto.

I just love minestrone but haven't had any in a long time. I just had a frozen pizza with extra tomatoes on top today.

I will have rice, sauted vegetables and fish curry for lunch. For us daily we have fish for lunch. On Sundays we have chicken or beef. We too have salad for lunch and dinner.
