And now for the healthy dessert ~ Chocolate-Covered Strawberries

My chocolate-covered strawberries - only eat 2 per day

Right about now you're thinking... 1.) How did she still feel like making dessert 2.) How in the heck is this healthy Well, I'll tell ya. First off, strawberries, being more of a "sour" -type fruit, are generally better for you. I just cut the stems right off so they sit nicely on their backs (as you can see in my pic.) And now for the chocolate. Anyone who knows me knows that I have never been a big fan of sweets. So I melt the chocolate (Hershey's) using 2 large chocolate bars. One is the regular milk chocolate, and the other one is DARK chocolate (SO important here!) Dark chocolate is known for regulating serotonin levels in the brain. Serotonin is in charge of mood, sleep, and OCD problems. Many depressed people have serotonin issues going on and they're not even aware of it. I'm not depressed, never really suffered from depression. But I do have some OCD probs every now and then. These chocolate-covered strawberries help keep things in check. So I don't clean my room 3 times in a row. And they're not super-sweet (we don't want insulin spikes, folks.) One of my favorite brain-foods right here. ^

I don't know why, but for me chocolate and strawberries has always sounded wrong somehow. But then chocolate and any fruit just doesn't seem to appeal to me. Kind of like bacon flavored soda.

@JolietJake ...And my Dad always wants me to make him chocolate-covered bananas whenever I make these strawberries. Now THAT, I don't care for. The strawberries, not bad. Without them, I really wouldn't eat any fruit at all. I'm more of a veggie-girl. How do you feel about caramel apples? That's almost the same concept as what we've got going on here with the chocolate strawberries. @JolietJake DO YOU like turkey bacon (I don't know why that came out so serious.) haha Also: If you chew on some almonds and then take a sip of Coke while you're still chewing the almonds, it will taste like Dr. Pepper. A fun experiment to try. Yep, I really do have that kind of time.

Thank you @kiran8. And so easy to make once you "learn the swirl." You know what I mean, kind of like cake-decorating, takes some practice.

@Happy2BeMe Hey you know what, I make them year-round....but there's one time of year when the strawberries always seem to taste a little sour. Goes on for a few months too....do you remember what time of year that is? I'm thinking....late winter/early Spring? Just a guess though.. (?)

If it's got fruit in it, it HAS to be healthy, right?
