Chili Cheese Nachos and Football

Hubby is watching Football. I listed foods we could eat for lunch. He chose chili cheese nachos. I had a jar of queso-a slightly spicy cheese sauce- on hand, and I always have chili in my stockpile. For my well being I opened a can of refried beans. For those who are not familiar, refries are beans that have been cooked down to nearly dry and mashed and seasoned. Sometimes fat or hot peppers are added, but mine had neither. I surprised him with a pumpkin "dump cake". For that you make pumpkin pie filling with milk eggs and spices. Pour it into a 9x13 pan, and top it with a cake mix and a stick of butter. I added pecans. We are eating it now. It is a really cold day, as it is for many. Staying in and eating well and taking it easy. How is your day?

We had rain today. It was beautiful when I went inside a building. When I came out it was pouring. We need the rain so I would clean my plastic on my scooter at time but then gave up. I could see out . It was really coming down.

2 days ago I made a huge pot of pinto beans so now I'm having beans for every meal, I guess you'd call them refried cuz they're so soft I can mash with my spoon. I just added a can of sardines to the beans I had a while ago, ummm ummm good.

I would have never thought of sardines with the beans. I made black eyed peas with ham the other day. Potato soup today, with ham, and then, you guessed it, pintos with ham will be next. I am trying to learn how not to cook for an army when just two of us live here.
