How do you prepare sweet potatoes?

Happy Sunday everyone. It is still dawn here in Germany. I couldn't sleep anymore and got up from bed and made a sleeping tea as I had a disturbing sleep. I want to go back to bed after writing this post.
I was checking my new photos and got the idea what to write here. A few days ago, I fried sweet potatoes. While they were still hot, they were crispy. After that the fried sliced potatoes became cold and no longer crispy anymore.
How do you keep the crispness of the sweet potatoes? How do you cook your sweet potatoes?
It is almost 5 in the morning. I will try to get a sleep and the sleeping tea is working now. See you when I wake up. Ciao for now. Enjoy your Sunday.

Most of the time simply boiled and eaten with and or sea rock salt, butter or margarine. If I feel like eating our " kamote-Q" we simply buy cause it's meticulous to prepare.

@louievill it's so much easier to buy than make them. the big one in savemore is a bestseller, but i prefer to buy from the stalls set up around our neighborhood, since they also sell other snacks.

Sprinkle sliced sweet potatoes with salt and allow to sit in a strainer for 20 minutes or so. This will draw out much of the juice and bring the sugars to the surface making for a crispier fry that should stay that way a bit longer.

@hereandthere You can do this with white potatoes as well. Be sure to drain after frying on towels. Also you might like to soak potatoes in corn starch water. Add a couple tablespoons to bowl of cold water and soak (you can put them in frig overnight if you like). Drain, pat dry, fry, drain.

@hereandthere Either sweet spices such as sugar, cinnamon, and nutmeg. Or I'll put garlic and onion powder and a little bit of salt.

I prefer just to boil them but lately I tried them with a dash of hazel nut choco spread and it was tasty.

we just brush it well before boiling in a little salt. then peel and eat with butter/margarine and/or sugar.

I either bake the sweet potatoes or mix them with white potatoes in scalloped potatoes.

I am guessing to keep them crisp you would have to deep fry them and lay them on a paper towel to drain.

I have done that @andriaperry but the deep fried sweet potatoes were no longer crisp when they were cold.
