Lazy Dinner Tonight

I took chicken out to defrost this morning but had no idea how I was going to prepare it. I had a few ideas in mind but as the day turned into evening and time to cook I really didn't feel like anything exotic. So, I took out the little George Forman grill that I have and cooked the chicken that way, sliced it up and we're having it on a salad. I like my salad fully loaded (tomates, red onion, peas, croutons, sunflower seeds, bacon bits and my favorite dressing Kens Light Blue Cheese). My daughter likes her salad pretty plain and maybe will add some croutons and tomatoes. This worked well for both of us and my time in the kitchen was next to nothing. What are you having for dinner?

We had leftovers tonight because there was so much in the refrigerator that needed to be eaten, I didn't have any tupperware bowls left for any more.

A lot of times I have no idea what to do with the chicken, so I'll just toss it in the oven with basic seasonings and decide the rest later . Salad sounds good! I just finished tossing things in the crock pot for spaghetti sauce . . . all I have to do later is cook the pasta!

Home done cream of mushroom/potato soup, bread bun fresh from the oven with a chunk of butter, salad that had olives in with a little Italian dressing. Couple of home done ginger cookies.

Yesterday we had beans and plantains broth. I enjoyed it because my sister-in-law likes making it watery. I slept early too.

Yesterday evening I prepared chicken wings, served with blue cheese dip and a salad. Time by time I like something spicy.

That sounded nice. We had chicken (No surprise there) with mashed cauliflower and potato with thyme and parsley. Quite pleasant. It is too cold for us to have salad here yet!

We had lasagna. Tuesday night will be chicken. I am thinking of chicken club house sandwiches, I'll have to check to see that I have a package of bacon, otherwise I'll have to think of another thing to do with the chicken. Gotta love the chicken.
