11 pumpkin muffins

One of the things I wanted to do today was to make pumpkin muffins. I finally did that this afternoon. Here is an image, but you caught me. I had to eat one. I downloaded the pumpkin muffin recipe from Libby's. It makes thirty muffins. Since I am rebellious, I changed a thing or two. I used 1 C. brown sugar and 2 C white, instead of 3 C. white. Next time, I think I will cut the sugar in half, they are very sweet. The other thing I changed was to add some pecans and some dried fruit to the batter. I did cranberries, raisins and dried cherries. I had to have one as soon as it came out of the oven. You caught me. Wish I could send you each one to enjoy.

I love just about anything that has the word "pumpkin" in it! Those muffins sound like they are very delicious, so I hope you enjoy eating every last one of them! I discovered Keebler pumpkin spice cookies the other day at the grocery store, so I've found my new favorite junk food!

@moffittjc That is why I stock up on canned pumpkin and make a lot of my own stuff. I loved that this recipe used an ample amount of spice.

@JESSY3236 You should of went for and got all three boxes. It won't be long before we can't find anything pumpkin spice on the shelves until October rolls around again! lol

@moffittjc I love pumpkin spice stuff too. My mother fussed at me that I was getting three boxes of pumpkin spice bars. They still had them at Walmart a few days ago. I was tempted, but decided not to get them.

I used to make bran muffins and several other kinds and kept them in the freezer. Great for a quick snack. These look delicious.

I usually have several kinds on hand, unless hubby takes them and "shares" them with others. Then I have to make more.

Most of the time I cut the sugar in half in recipes, everything they propose is too much sweet. Your muffins look good.

@LadyDuck I even considered using molasses to sweeten as it is not as sweet tasting and adds a little nutrition.

The dried fruit would also add sweetness, plus I believe the brown sugar tastes sweeter than white.

That's a lot of sugar for sweet pumpkin but maybe its cause it makes so many muffins. I like to mess around with recipes too.

I think some of both. Thirty muffins is a lot, but I think it has more sugar compared to my other muffin recipes. The pumpkin is sweet tasting to me, and then the spices make for a sweet taste too.

ooh i love pumpkin muffins !ever try the splenda brown sugar? i use it for my upside down pineapple cakes. sprinkle any cinnamon on top?

I avoid the artificial sweeteners like splenda, although I will use stevia. I just had cinnamon in the pumpkin.

Wow, it looks delicious. I have never had pumpkin muffins. I have had chocolate and vanilla muffins,they are very delicious. I will try pumpkin muffins some day.

Well, the nuts were not in the original recipe. I bet it would be good with sunflower seeds, too.
