Sundays Plan Turned Into Mondays Dinner

Yesterday my daughter said she wanted to cook dinner and make fried chicken cutlets (which we haven't had in ages). I was looking forward to them as well as not having to cook. But, it turned out that the day got the better of us, flew by faster than we expected and by the time we realized it was dinner time she didn't feel like doing all that work. So, we ordered pizza and now we're having the chicken tonight. No breading and frying for me. I put it all in the crock pot with some honey teryaki marinade and it smells delicious. We'll have it with rice and streamed broccoli. I know my daughter won't care what she comes home to as today was her working day and driving home with a two hour commute is horrible. She'll come in the house starving and exhausted. Tonight we'll relax and watch the auditions for the Voice and I'm sure she'll go to bed early. Tomorrow she's off so I'm hoping we can get to the supermarket and get our shopping done. Another storm is heading our way for Wednesday and I don't think I can make it through another storm without snacks!!!

She has a two hour commute going to work and coming home which is exhausting but most weeks she only goes into the office two or three days. Hopefully one of these days she'll find a job closer to home.

Ooh, we never had a marinade like that before. We do a lot of marinades for chicken, that is something I need to suggest to my mom.

The crock pot saved the day! Enjoy your chicken dinner! We'll probably watch the Voice too after coming home from tae kwon do - we'll have a late dinner of Japanese noodles (udon).

I love fried chicken cutlets, it's not the healthiest food so I refrain to make the cutlets too often, but I love them.
