What's for dinner? March 8

What's going on the dinner table tonight? I want to know!
I am making 2 things that don't really go together but what the hell? I'm doing bison steak sous vide with rosemary and garlic for about 4 hours in the water bath. That should make it nice and tender and I'll finish it off in a screaming hot cast iron skillet so it has a nice brown crust on the outside. To go with that I'm doing Rick Bayless' Spaghetti Squash "Fideos" with Chipotle, Crema, and Avocado. The recipe calls for chorizo too but I don't eat sausage so I'm skipping that. The 2 flavor profiles don't really mesh but I know that my husband will never eat the spaghetti squash so I'm taking the opportunity to make it tonight since he isn't going to be home. I've been wanting to make the recipe for like a month now.

That looks amazing! I have been looking for more avocado recipes. Will have to try this!
