What's for dinner? March 23

What's going on the dinner table tonight? Do tell! I am making a new lasagna recipe from the Small Victories cookbook. This one seems pretty simple and doesn't use ricotta or bechamel. I've seen a lot of positive reviews on it so I'm giving it a whirl. I was going to make my own pasta sheets as called for in the recipe but it is Friday and I worked all day. . . so I am cheating and using no-boil lasagna noodles instead which the recipe says is an acceptable substitute. If I like this lasagna, I'll make my own pasta next time. That's what's happening here. What are YOU having? I want to know!
This lasagna comes from Julia Turshen's lovely cookbook, Small Victories (Chronicle Books, 2016).

@thislittlepennyearns gotcha. I had a chicken caesar salad for lunch. It was good but I was STARVING like 2 hours later.

I´m alone (at last) after having work and worker at home all day. So I decided to dine snacks and leftovers. Leticia saved a bit of a kale omelet she made as part of the lunch. I also found out part of the veggies of a casserole we had this morning (no more meat though). I think that it is going to be enough.

I was trying to find wild-caught salmon at the store today but it was all farm-raised aside from sockeye which I don't like. I wound up buying a bag of frozen filets which were wild-caught.

I'm having stress with a side helping of freaking out. In all honesty, I think I'm making a "clear out the fridge" dinner tonight and going grocery shopping.

My fridge was pretty empty today. I did the weekly grocery shop on the way home from work. Now I'm stocked up for the week.
