What's going on the dinner table tonight? I want to know! I am making roasted prime rib. I've had a paste of fresh chopped garlic, fresh rosemary, kosher salt, ground black pepper, and extra virgin olive oil on it for the past couple of hours giving it great flavor. I'll roast it until it is medium rare. Yum! To go with it I'm making loaded mashed cauliflower and roasted asparagus. That's what's happening here. What are YOU having? Do tell!

What is kosher salt, please? I thought the term 'kosher' was only used for meat.

It's a more coarse salt than the usual table salt. Most salts are kosher, but the name of this variety actually comes from its use in making meat kosher by removing surface blood. The term 'kosher' applies to any food that's fit for consumption according to the Torah, not just meat.

Yuki explained it perfectly. It is a coarser salt that is commonly used in cooking.

I'm doing a prime rib tomorrow for supper. Tonight my husband is grilling us some steaks, mushrooms, baked potatoes, asparagus and bruschetta. Everything always tasted better grilled.

I love grilled food too. I haven't used our grill in months. Been too cold. I used to grill all winter but I've become a sissy in my old age. haha

Green Giant had it in the freezer section already made. It is actually called "Bacon and Cheddar" (I just looked) but in my mind that turned to "loaded". I normally don't buy pre-made things like this but I wanted to give it a try. It is supposed to be like mashed potatoes but uses cauliflower instead of potatoes. Fewer carbs, calories, etc. I make mashed cauliflower sometimes and it is actually pretty good. We'll see how this stuff is.

that is a nice meal. My mom isn't a fan of prime rib, I don't mind it though. We aren't having a dinner tonight. We are having more of a fend of yourself night, so probably some light snacking!

@NJChicaa My mom was craving prime rib the night she had me, but they didn't have any left at the resturant she was at and she was very peeved, even more so because she hated it. And then I appeared a few short hours later, Haha!

It's a bit too late to start a proper prime rib tonight, but I realized a little while ago that one of the local grocery stores has ribeye roasts on sale this week for a really great price. I'm going to either go out after my husband gets home and buy one or make him stop on the way home, and that will end up being our Easter dinner. It'll be a nice change of pace since we don't usually do anything really special for Easter, and I didn't feel up to doing anything fancier than fast food for my birthday yesterday. Roasted asparagus sounds divine... the kids aren't fans of it, so I'll probably just steam up a bunch of broccoli, cauliflower, and carrots to go along with it. Tonight... um, would you believe me if I said I hadn't thought that far ahead, even though I've got tomorrow's menu set? I might just go the quick and easy route and toss a couple bags of frozen stir fry veggies in a pan, cook up some rice, and toss the rest of that London broil we have in after marinating it in teriyaki sauce for a bit. It's not the best meat for stir fry, but it works in a pinch if we marinate it ahead of time to tenderize it.

@NJChicaa It does sound great... unfortunately the kids have overruled me and decided we're doing grilled cheese sandwiches and tomato soup. It's not too bad, though... the 8-year-old is getting a kick out of learning to cook, so I'm going to let her do a lot of the work.

Your dinner is far better than mine... prime rib is one of my favorite things! We had frozen pizza because it's been a heck of a week, and I didn't want to mess up the kitchen too much before the egg dyeing.
