Brisket egg roll recipe

I have a lot of brisket bits and shreds caused by my husband's insistence on cutting some of the meat today before it was fully rested. Friends of ours were in Nashville a couple of weeks ago and they had all sorts of brisket, including brisket egg rolls. That had me putting egg roll wrappers on the grocery shopping list this morning. It seems a novel way to use up leftover bits. I had a general idea of what I wanted to do but I also did some Google searching for recipes to see what others use. It seems that I was pretty much on the right track. One good idea that I saw was to add jalapeno pepper but unfortunately I don't have any on hand. Maybe I'll make another trip to the store tomorrow morning as that does sound like a great addition. I have no idea what I'll do with these brisket egg rolls--likely freeze them for future entertaining use. Still, I'll have fun playing in the kitchen making them.
