Lunch delicacies.

Today I´m alone as some of you know. So I make all sorts of delicacies for me with odds and ends. I just ate a dish of oeuf en cocotte. I had cooked kale, cream and ricotta to mix for the bottom. I added a raw egg, cream and parmesan cheese on top. To the oven and then to the tummy! Now I have at the oven eggplant slices baked in olive oil and salt to eat while I mylot. YUM! What are you eating today?

Eggplant slices baked? Something new for me...I thought they get bitter if you do that.

They don´t get bitter. You peel them, halve them or cut them in thick slices, add salt and plenty of olive oil. They are ready in 3/4 of an hour at medium temperature.

I made my eggplant dish on Friday, I have enough for several days. Its eggplant, bell pepper, onions, parsley and garlic cooked in olive oil. Today I had this for breakfast, and a slice of cheese for lunch, I may go out for dinner.
