Decoded Everything's sub group: Decoded Science is science for the layperson, like myself. I am not a chemist but I can read this article and understand it easily. It doesn't make me a rocket scientist but does help satisfy my curiosity. If you are interested in knowing the difference between starches, sugars and cellulose, this article will answer it for you.

I knew some about carbohydrates. That starchy foods can convert into glucose in our blood so I realize I need to cut back on potatoes if I want to cut back on my carbs to lose a bit of weight.
While healthy people can tolerate potatoes in moderation, they're not a good choice for anyone who needs to keep her blood sugar balanced.

@rakski , and they are a good food. I mean, I can think of many ways to serve up potatoes, and they are often included mixed together with other vegetables like carrots and onions and green peas. Beef stew is a good one. I love beef stew with potatoes, onions, carrots and so forth.
